Just wanted to let you know that this week I took your round roast, seared it for 30 seconds per side, chilled it, sliced on setting 1 on my meat slicer and made amazing carpaccio. It was so tender everyone thought it was tenderloin and had three times the flavor. I just shaved some parmigiano and dressed it with a mix of olive and truffle oil, pepper,salt and lemon. It was really amazing.

Just a quick note of appreciation for producing the finest briskets I have ever eaten---and coming from the grandson of a kosher butcher I have chewed on a few great briskets in my lifetime!
One of the amazing qualities of your Wagyu beef is the way they plump as they bake! Add that to their "beefier" flavor and you have a meal fit for a King!
The next time I find Wagyu brisket in my freezer I plan on going all out with a Texas Style Bar-B-Que treatment to find out for myself why Myron Mixon (world champ BBQ competitor) insists that one of the secrets for his success is first and foremost choosing a Wagyu brisket.
