What is Wagyu Beef? You’ve probably heard of Kobe beef. It’s legendary for superior flavor, buttery texture, and perfect marbling. Kobe is not a breed, though. Wagyu is the breed, and Kobe beef comes from the Wagyu breed of cattle raised in the Kobe region of Japan. Just as “Champagne” can only come from the Champagne region in France, Kobe can only come from Kobe, Japan. Often called “American Kobe,” Wagyu meat is renowned for the same superior taste characteristics, tenderness, and marbling as traditional Japanese Kobe. In fact, Wagyu beef marbling is so superior to domestic American beef that a combination American/Japanese grading system is used. USDA Prime (the highest-graded USDA grade for beef) ranges from 3+ to 4. Wagyu beef receives a 5 to 8 on the more stringent Japanese scale. Moreover, Washington State University researchers, who study the Wagyu breed, found that Wagyu beef cuts are marbled with monounsaturated fat—the healthier fat. Gerry worked closely with Washington State University to develop and improve the foundation of Wagyu cattle in the States. How Can Mangalitsa Grass-Fed Pork Taste So Different from More Conventional Pork Breeds? Mangalitsa pigs are a classified “lard-type” breed. However, Mangalitsa pigs actually have more unsaturated fat (versus high levels of saturated fat) than conventionally bred pigs (classified as “meat-type pigs”). When cooked, Mangalitsa pork is exceptionally, juicy, tender, and marbled. Chefs rave about the meat and lard’s versatility—the lard can be whipped, and chefs don’t need to dress up the meat’s flavor with excess salt or spices. Pasture-Raised Chicken: Some Lessons from the French When we decided to add free-range chicken to our burgeoning farm, we had strict standards: the meat had to have superior flavor and moistness, the birds had to be from a diverse genetic stock, and the introduction of poultry would contribute to our sustainable farming methods. The French, it turns out have a similar philosophy. In fact, 30% of the poultry sold in France today comes from pasture-raised chicken farmed according to Label Rouge, the strict standards developed to regulate grass-fed poultry. To qualify as a Label Rouge farm, the chickens must be a slow-growing breed, raised primarily in pasture, fed an all-natural diet, and raised free of medications and antibiotics (unless prescribed). The result is meat that has deeper flavor characteristics, and a texture that surpasses conventionally raised chicken. At Pasture Prime, our family follows the strict Label Rouge guidelines. We’ve chosen the Poulet Rouge and Red Ranger breeds. Our grass-fed poultry has intense flavor, due to the slow-growth method we employ. In addition to rich taste, slow-growing breeds have balanced growth of their organs, muscle, and bones. They’re hardy and can live outdoors, and because they come from a diverse genetic stock, their immunity is stronger.
