A heritage breed, in fact. At Pasture Prime, our family has selected Red Bourbon turkeys, which are a classified heritage turkey breed. Did you know that 99.99% of turkeys sold today come from one breed, the Broad-Breasted White? In fact, breeds such as Red Bourbons had nearly become extinct by 1990. The Broad Breasted dominated because they grew quickly and produced a lot of meat. However, decades of breeding turkeys for fast-meat growth have resulted in a breed that is so top-heavy, it cannot mate on its own, has a hard time walking, and is very vulnerable to disease, due to a lack of genetic diversity. The meat is dry and not very flavorful.
Fortunately, heritage breeds are making a comeback, and Pasture Prime is proud to offer you our carefully selected Red Bourbon free-range turkey.
